In an old bank building on the Haarlemmerstraat, Kluis recently opened its doors. In what once was Dulac you now walk into a no-nonsense restaurant and bar where you can enjoy the tastiest bites and juices in a living room atmosphere.
The beautiful building with the characteristics of the Amsterdam School has preserved the bank's rich history. The lobby, with original Art Deco tiles, leads to the large elongated bar. The restaurant overlooks the courtyard through immense windows. The large leather sofas invite you to snuggle up in the cushions and indulge in the refined and quirky menu.
Vault serves an all-day breakfast, lunch and dinner menu full of international classics. The breakfast and lunch menu are like a comfort food world tour where recognizable dishes are given a sophisticated twist. Like the porky baguette with 14-hour cooked pork neck, the Norwegian eggs with house-made gravlax and yuzu mayonnaise or a trio of baos with pork belly, chicken katsu and peking duck.
At dinner, they serve a quirky tasting menu from 3 courses (€39) to 6 courses (€66). Think duck leg confit with jam and shortbread, scallops with king crab and beurre noisette and beef wellington with smoked mashed potatoes and bone marrow sauce. Fine dining, but anything but stiff.
Kluis boasts a more than amazing wine cellar. With elegant white wines such as a fresh Weissburgunder from Germany or a fruity Italian Fontanasanta. The wide selection of red wines includes classics like a Barolo but also less common varieties like the Negre de Negre from the inhospitable Spanish Priorat. All combine very well in a wine pairing.
