After a culinary tour of six locations in Amsterdam, from Wibautstraat to Stadionplein, Prinses Irenestraat, Rokin, Paradijsplein and Spaarndammerstraat, Michiel van der Eerde established himself and Bar Baut on Stadionweg in Zuid early this year.
Van der Eerde deliberately opted for permanence. Baut can be found where restaurant Zuid used to be. "I've had a lot of success in this neighborhood, which is why I want to open a permanent location here," Van der Eerde told Het Parool. "In Zuid there is a need for a good bar where you can have drinks combined with tasty, small bar dishes. This is what we are responding to. The menu consists of the best dishes from six editions of Baut."

Before his start as an entrepreneurial chef, for which the late culinary journalist Johannes van Dam rewarded Baut with a 10-, Van der Eerde worked at starred restaurants De Hoefslag, Bokkedoorns, Oud Sluis and the Amstel Hotel, and was culinary director at IQ Creative restaurants Envy, Nevy, Supperclub, Mazzo and Nomads.
There is certainly no end to the itinerant Baut, Michiel and his gang will continue to search for new and suitable pop-up locations.
