In restaurant land, The Greenhouse is an oddity. Somewhat hidden away off the Middenweg is the glass village of De Kas. At the Greenhouse, they are convinced that food tastes best when prepared with super-fresh ingredients, grown and harvested with respect for nature. At the restaurant, De Kas has its own greenhouses and a garden. They also have a large piece of field in the Beemster 10 kilometers outside Amsterdam, where they grow seasonal vegetables in the open ground. What they cannot grow themselves, they get from environmentally conscious farmers in the Amsterdam area.
At the Greenhouse, one menu is served daily, tailored to the harvest from its own nursery. The Greenhouse's cooking style is inspired by the cuisines of the Mediterranean countryside.
